I've never been a crop vs full frame "snob." They each have their strengths and their weaknesses. I've had crop frame cameras like the 7D and the 7D Mark ii that were fantastic and the image quality was extremely good, as was the low light performance. I will say the bokeh on my 5D Mark IV (Full Frame) was noticeably nicer (in my opinion) than on my 7D Mark II APS-C.
Also, the Full Frame 5D4 has better DR which is useful when trying to recover shadows or highlights. Does that mean the 7D2 is a bad camera? Not at all, it was a great camera and like I said, I got excellent results.
Speaking of Fuji (which he did), I would love to have the Fuji X100V, with it's 26MP APS-C sensor, as a street photography camera, but they are nowhere to be found. I do have a Panasonic LX100 with a 13MP Micro four thirds sensor and for every day walk-about photography it's really nice.

Apparently if there are X100V's actually available, they're bumping the $2K mark! Fuji can't get parts and the camera gained enough rave reviews the demand went ballistic. Rather than commit to that kind of expense I'd seriously consider upgrading lenses for the cameras I have now. Or even consider a used full-frame (gasp!) DSLR body.

Yes, I know. I don't like it THAT much. Adorama says they are back eroded << (ordered, Autocorrect did that!), but you can order at current price of $1399 and they won't charge your card unless and until they ship the camera.

This would be a dream street photography camera with the flip out screen (get candid shots without being obvious you're holding a camera up to your eye.)

 
I'm pretty unabashed when it comes to pointing a camera at folks. Only a few encounters have been adversarial. Never to the point where the camera had to be used as a bludgeon though. Now with the ubiquity of cellphones, "Ring" and street cameras, the expectation of anonymity is much diminished.

Unless of course you're disguised as a Marvel character!
