What is the difference between grade 8 hardware and 18-8 Stainless hardware? Should 18-8 be used on suspension?

Basic info is:

1) If ya hit it with a grinder and it sparks, it ain't "Stainless".
2) If ya put a magnet to it and it attracts, it ain't "Stainless".
