Just found this thread and thought I'd share my rotisserie, the common two engine stand variety, with you. If you go with engine stands, I'd suggest the 4 wheel version for stability. Do plan on replacing the casters with something larger...I believe mine are 4 1/2".
As far as mounting the body to the rotisserie, the front was no problem for my car (Mk II Sprite) but the rear presents the problem. I needed to replace the trunk floor pan and do some hammer and dolly work and patching on the rear valance. My solution is pictured below. You can see several photos to draw ideas from at:
