While I have the engine torn down to the present state I am tempted to remove the pistons and check the rings etc.

I am afraid that if the rings are OK I will do more harm than good.

Before the tear down the car had 75-80 psi at road speed and about 50 at idle. The car does not smoke or use an excessive amount of oil.
 
IMO, the time to have "checked" rings would've been via a compression test before any teardown. Also, from all I've heard, once you remove a piston/ring assembly from a cylinder, your best bet (only bet?) is to hone the cylinders and install new rings. Meanwhile, I don't really know of any correlation between rings and oil pressure.

Bottom line based on what you wrote: I'd leave well enough alone!
 
I did a compression check earlier but I lost the paper I had the results on.

I believe it was around 140psi and close between all cylinders.

I write notes to remind me and then I forget where the notes are. Sad isn't it.

Head gasket only if you have removed the head.
 
As I posted in another thread, I have the head off being refurbished, a rocker shaft assembly ordered, the oil pan is off and I checked the rod bearings. I am going to order a timing chain and tensioner. While I am at it I am going to change the thrust washer.
