Its been 20 plus years since I changed rear brake shoes on a 3000. Short of growing a third or fourth arm and hand how the devil do I keep the springs in place and install the new shoes?

You Don't. Install the shoes then with a brake tool or vise grips reinstall the springs.

Or hook one end of the spring inplace and force the opposite end into its proper location.
