Are these minor imperfections going to be problematic or am I being too nit picky? Will the gasket when sprayed with copper coat seal the imperfections when

Mine was the same way. I have never been impressed how the head gaskets fit. They never fit the water holes a 100% correct and sometimes the head bolt holes are a little off center. I guess the good news is they are available.

The premium gasket from Moss has stainless ,composite and silicone bead for what appears to be much better construction.This gasket seems to be the same as Racetorations offering but at half the price.$75 vs 150.
The problem,for me,is the premium gasket is 87-89mm which to me means its an 89mm gasket,that will be slightly oversize for 87.
I have 86mm so not an ideal fit.
Also the premium gasket has round cylinder holes ,unlike the original or yours that are more shaped for the combustion chamber.
