You can test the thermostat by heating it up with water in a pan. I always do before installing even a
new one. A head gasket can cause overheating. I don't think you said where the oil was coming from.
Any oil in the water? You shouldn't have to go through all this with new radiators, fans and such.
My Bj8 runs ok all summer here in Ky. and it gets HOT. Original Rad. and 4 blade fan.

FWIW, my Alfa Spider was running way too cool - less than 120. I suspected a stuck thermostat and I was right. Replaced it and now, it runs at 160 and warms up quickly. Remember these cars were built in England where it never gets too cold or too hot.
