Just to add to what Steve said, check the flanges of the oil pan and valve cover carefully. If the bolts have been overtightened the flange can get distorted and won't seal right with a new or old gasket. You can carefully flatten the flange with hammers, dolly, and a good flat surface to check against. BTW, resist the temptation to bang out any dents in the bottom of your oil pan ... you could end up with fatigue cracks as a result.
For the valve cover I usually use RTV gasket sealer to glue the gasket to the cover. Then I use Hylomar on the head surface side. Makes it easier when you are taking the cover off for valve adjustments.
