Midget Thermostat options

Time has come to re-install my cooling sys. (1500 Midget)
Question. Mine may see the road from time to time. No long trips by any means, No heat installed. Should I toss that thermostat all together?
 
For a semi-street car, I'd just run a 160F thermostat.

For racing only, I'd use a blanking plate. You can build a blanking plate by just "gutting" an old thermostat...remove the spring and movable plate (the valve).
