Personal and family business take me to Utah and Idaho this week, so a big back East "Hey!" to the friendly folks here in the West! About as cold here as it is at home!

If you find yourself in Salt Lake City be sure to check out the Red Iquana. Not really Mexican food – but what they call pre-Hispanic cuisine. Their Mole Sauces (yes that’s plural) are the stuff of legend. No literally – this is the same stuff Aztec Emperors (or so they say) chowed down on when they bellied up to the table.

My personal favorite is the Yellow Mole sauce over chicken & rice with a pile of hot corn tortillas and a cold Modelo cerveza.

Follow my advice and you'll be in for a treat you'll never forget.

Differences; No Tacos & Burritos or the normal Mexican fare has to be the biggest difference you'll notice right off the bat. Lots of rich sauces.
 
I'll second the advice on the Red Iguana. The mole is excellent. One of my favorite restaurants here. Welcome out to our part of the world.

Last week it was quite nice and warm. This week it's cold. Spring in the Rockies...

Ah, yes. Before we left Houston we used to go to a restaurant that specialized in Mayan cuisine. Lots of pork (and turkey as I recall), limes and sauces with chili and chocolate. I considered it more a regional variation than pre-Colombian.

I really liked it- different from the usual run of Tex-Mex, and different too from the more authentic Mexican restaurants that were starting to become more popular too.

I really, really need to get back... guess I'll just have a wee dram and commiserate with myself....

The Red Iguana it is, I've been coming here for years, college and then business, I've never heard of the Red Iguana, where is it? We'll eat there this weekend. Had a bunch of Mayan food in Belize and I really like hot stuff.

One of the high points of my trip was meeting Dave Russell today, (super nice guy, very good to put a face to a name) but the real delight was that he let me drive his 100! Thanks again, Dave.
