Jack got here early this evening...we went out & had fried pickles, shrimp, french fries & good N'Awlins bread....then we hung around in the GarageMahal until about 9:30 when he decided it was an hour later here than in Florida.....Miss Agatha is also tucked in for the night at my place...tomorrow morning we take her to the body shop.
They're a great appetizer. Here's a basic recipie:
Ingredients:
Vegetable oil for frying
1 cup self rising cornmeal mix
1/4 cup flour
1/2 teaspoon ground black pepper
1 egg, lightly beaten
1/2 cup milk
2 cups dill pickle chips, well drained
Directions:
In a deep fryer or a large Dutch oven, with a deep frying thermometer, heat to 360F.
In a shallow bowl, stir together cornmeal mix, flour and black pepper.
In another bowl, combine egg and milk. Dip dill chips in milk mixture and roll in cornmeal mixture. Fry pickles in batches for about 3 minutes until golden brown. Drain on paper towels.
But the Cajun restaurant we went to does theirs a bit differently, I'm sure. We had Key Lime mayonnaise as a dip but you could use Ranch salad dressing or most anything you liked.
