I know there are some southerners out there
 
Here ya go:

1/2 cup oil
3 tablespoons flour
1 cup finely chopped onions
1 1/2 lbs. chopped chicken giblets
1/2 cup chopped celery
1/2 cup finely chopped parsley
1 cup chopped green onions
1/2 cup chopped bell pepper
1 teaspoon minced garlic
salt and pepper to taste
1/8 teaspoon cayenne pepper
4 1/2 cups stock
2 cups long grain rice

In a Dutch oven make a brown roux with oil and flour. Add onions and stir until onions are "clear". Add giblets, celery, parsley, green onions, bell pepper, garlic, and stir. Add salt, pepper, and cayenne. Cook for 5 minutes over medium heat; then add 1/2 cup stock and cook an additional 15 minutes. Skim excess oil from top of mixture and remove from heat. In a separate pot cook 2 cups rice in remaining 4 cups stock until fluffy. Fold rice into vegetable mixture and correct seasoning to taste. Heat in oven at 350 degrees for 20 minutes.

Haven't made it in years but cayenne is always a safe bet. Nothin' a'gin Mick, but I prefer to use the edible parts of the chicken in my food and the rest to bait crab traps.


I hate to say it but https://www.zatarains.com/Products/Rice-Mixes-and-Side-Dishes/Dirty-Rice-Mix-Original.aspx isn't bad and neither is their jambalaya....and y'all know how much I hate mass produced regional foods.

A fantastic cooking spice is Zataran's liquid crab boil but use it SPARINGLY as a dish seasoning. I soak raw peeled shirmp in it mixed with water if I plan on cooking them in another dish instead of having to boil them first.

Using a roux for that is a twist I haven't heard of yet. Mick, is it sticky?

My thoughts on home made dirty rice is might as well throw good cajun sausage and/or chicken chunks in it and make jambalaya instead of just a side dish. Whatever you plan on cooking in the future, it's a good idea to keep a few different stocks on hand. Peelings from properly boiled shimp, crab or crawfish shells or just plain old veggies clippin's make great stocks. Gentley boil them for a while, strain off and freeze in ziplock bags. It's upcycling southern style.

Yep, they do good work, and the liquid boil is a great addition. Fire water!

It is a side dish, otherwise it's jambalaya! Take that sausage and grill it to serve with the rice. Better yet, grill the "edible" parts of the chicken and lay them on top of the rice.

Oh great - now I'm hungry!

The problem I have with Zataras's and a lot of packaged rice is sodium. I believe their dirty rice has 720mg per serving. I just don't like the taste of salt which is probably good since I also have hbp. Your idea is a good one. Figure out what you want to use in your own mix and leave out excess salt.

You jesy but that's how my sis in Florida gets boiled crawfish. There's some company that flys them in.
