So I have 3/8" exhaust valves in the head. If I want to replace the valve "guides" for 3/8 they are NA but the 3/8 valves are available. If I want to do the conversion and get the valve guide with 5/16 dia valve stem in a 3/8 head I could go with a 5/16 valve stem but these are on Back Order?????? So do I just buy new 3/8 valves and hope the new stems take up any clearances or is a little wobble in the stem to guide clearance anything to be concerned about?

I would suggest that you widen your search for parts. Try British Parts NW, Rimmer, etc.
