Checking a temp guage

If I check the mechanical sending unit that screws into the thermostat housing with a pyrometer, should that give me the same temperature reading as the gauge in the dash?

More or less. Expect some margin of error -- maybe 5 degrees or so.

You can probably improve the readings from the pyrometer by cleaning a spot on the thermostat housing and painting it with a spot of satin black paint before your measurements.
