Basic question, but can you drive a '3 with the capillary style temperature sender removed? I've never had a sender go bad and I really want to keep driving her!

Ah. So simply find a properly sized bold with the right thread pattern to make sure the coolant doesn't leak out?
 
That's the idea. You'll likely also need a gasket of some sort under the head, to effect a seal.

Or if you want to drop by later tonight, I'm sure I've got a busted sender laying around somewhere that you could use (or a TR4 style sender).
 
No, a bolt won't work, as the capillary bulb seats on a surface inside the hole. You could just reinstall the old bulb and nut. Nothing will leak from the broken tube.
An alternative would be to use a very short bolt in conjunction with a sealing washer.

It's true the bulb seats inside, but that doesn't mean that's the only surface that can seal. No reason a bolt couldn't seal against the outside flat.

Sorry, hadn't read your edit when I posted that.

Another option might be a nut on a longer bolt.
 
Thats my problem! I'M the nut on the longer bolt, heh
