Ammeter bounce ???

Mine did the same thing-- I'd first check the status of all connectors/fittings to and from the generator and battery. At least clean them (aggressively). I thought I had checked the connections and then checked for continuity/resistance with tester and found there was still a bad connection. Scraped and cleaned all connections, replaced one and it solved the problem. Also check the wire to the clips to see if the wire has broken just before the connector under the insulation. Years of wiggling and bouncing may have broken part or all of the wires and you are getting intermittant current.
 
One thing to check also is the fan belt. If it is way to loose the same thing can happen.
 
The ammeter has started bouncing towards the charging side and back to the center while the engine is running. Does that indicate an issue with the generator or something else?
