Almost time to put some color on this car, I am wondering if any of you people have painted your own car and how much paint did it take 3qts or a gallon

If you are really really lucky, 3 quarts would probably do it. The cost for a gallon would be the same though and would allow for any "do-overs." What color you going with? If you are staying two-tone then my above statement about cost is probably no longer accurate since you are probably buying quarts anyway.

Going to get paint from TCP Global and use their Hotrod Flatz color is leaning to black fenders and roof and Grey body, too many nicks and a few dents I do not want to mess with.

Not hard, read up on it and the equipment you will need.

How hard is it to repaint a car?
Depends on what you want in the end result. It is not hard to just "paint a car." To get what looks like a "proper paint job," OTOH, takes a lot of hard work and many hours. The actual painting time is probably about 10% of both.
