Hello 64healey and welcome to the BCF.

I can tell you that when I refinished the Walnut dash on my TR6 I sanded off the old veneer the used PRE-CATALYZED Veneer Adhesive. It holds up better than contact cement. After I applied the adhesive, I sandwiched the dash between two pieces of plywood with bolts and wing nuts strategically placed. Tightening the wing nuts gave me the clamping pressure I needed while the glue dried. I finished it with UV Marine Grade Polyurethane.

When I did my dash on my TR250 I peeled/picked the thick varnish off the surface leaned and very lightly sanded and then simply finished with some Minwax clear poly and it ended up looking great. But how it ends up will be dependent on where it starts, a lot of people re veneer their dashes too.
