There is a company selling a rebuilt XK140 Water Pump on Ebay with a 8 Blades instead of the stock 4 Blades. I've never had mine off to confirm what I have, but does anyone have any experience with this upgrade?

I don't have direct experience with that upgrade, but given the propensity of the XK engine to run hot, I would think that anything you can do to increase the efficiency of the cooling system would be a good thing. My EType came originally with a regular steel radiator and, if you can believe it, a single blade radiator fan. A common upgrade for these cars is to replace the radiator with an aluminum alloy radiator and replace the anemic fan with a much more robust multi-blade electric fan:
